Method

Prepare the Salmon

    Season the Salmon

    Pat the Atlantic salmon fillets dry with paper towels. Season both sides with salt and black pepper.

    Cook the Salmon

    In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets, skin-side down, and cook for about 4-5 minutes. Carefully flip the fillets and cook for another 4-5 minutes, or until the salmon is cooked through and flakes easily with a fork. Remove from heat and set aside.

Make the Garlic Caper Butter Sauce

    Melt the Butter

    In a small saucepan over medium heat, melt the unsalted butter.

    Add Garlic and Capers

    Once the butter is melted, add the minced garlic and cook for 1-2 minutes until fragrant. Stir in the rinsed capers and cook for another minute.

    Finish the Sauce

    Remove from heat and stir in the lemon juice and chopped parsley. Set aside.

Prepare the 50/50 Mashed Potatoes

    Boil Potatoes and Cauliflower

    In a large pot, add the diced Yukon Gold potatoes and cauliflower florets. Cover with water, add salt, and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Mixture

    Drain the potatoes and cauliflower, then return to the pot. Add butter and milk, and mash until smooth. Season with salt and black pepper to taste.

Sauté the Seasonal Vegetables

    Cook the Vegetables

    In a medium skillet, heat olive oil over medium heat. Add the asparagus and zucchini, and season with salt and black pepper. Sauté for about 5-7 minutes until tender-crisp.

Plate the Dish

    Serve Together

    On a plate, serve the salmon fillet alongside a generous scoop of 50/50 mashed potatoes and sautéed seasonal vegetables. Drizzle the garlic caper butter sauce over the salmon and enjoy!
