Preparation

1. Prep the Ingredients

Chop the onion, garlic, ginger, bell pepper, and carrot. Cube the chicken breast into bite-sized pieces.

2. Sauté the Base

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and ginger, cooking for an additional minute.

3. Add Vegetables and Spices

Add the chopped bell pepper and sliced carrot to the pot. Sprinkle in the curry powder, turmeric, cumin, garam masala, salt, and black pepper. Stir well to coat the vegetables in the spices and cook for 3-4 minutes.

4. Cook the Chicken

Add the cubed chicken breast to the pot. Stir to combine and cook until the chicken is no longer pink, about 5-7 minutes.

5. Add Liquids

Pour in the coconut milk and vegetable broth. Bring the mixture to a simmer, then reduce the heat and cook for 10 minutes.

6. Add Spinach and Chickpeas

Stir in the fresh spinach and drained chickpeas. Cook for an additional 5 minutes until the spinach is wilted and everything is heated through.
