Oven-Drying Peaches

Prepare the Peaches

Preheat the oven to 200°F (93°C). Slice the Troy Regier peaches in half, remove the pits, and place them cut side up on a baking sheet lined with parchment paper.

Season the Peaches

Drizzle honey, lemon juice, and sprinkle salt over the peach halves.

Dry the Peaches

Place the baking sheet in the oven and dry the peaches for 4-6 hours until they are shriveled and no longer sticky. Let cool.

Preparing Baby Beets

Roast the Beets

Preheat the oven to 400°F (200°C). Wash the baby beets, trim the tops, and place them in a baking dish. Drizzle with olive oil, balsamic vinegar, salt, and pepper.

Cook the Beets

Cover the dish with foil and roast for 30-40 minutes until tender. Remove from the oven and let cool before peeling.

Making the Blackberry Huckleberry Jus

Combine Ingredients

In a saucepan, combine blackberries, huckleberries, red wine, and sugar. Bring to a boil over medium heat.

Thicken the Jus

In a small bowl, mix cornstarch and water to create a slurry. Once the berry mixture is boiling, stir in the cornstarch slurry and reduce heat to low, cooking until thickened.

Strain the Jus

Strain the jus through a fine mesh sieve to remove seeds and pulp. Set aside.
