Prepare the Crust
Make the crust
In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.
Prepare the Filling
Mix the filling
In a large mixing bowl, beat the Brillat Savarin cheese and cream cheese until smooth. Gradually add sugar and vanilla extract, mixing well. Add eggs one at a time, beating well after each addition. Finally, mix in heavy cream until fully incorporated.
Assemble and Bake
Bake the cheesecake
Pour the cheese mixture over the prepared crust in the springform pan. Bake in a preheated oven at 325°F (160°C) for about 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.
Chill and Serve
Chill the cheesecake
Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight to fully set.
Prepare the topping
Before serving, top the chilled cheesecake with sliced figs and diced rocky sweet melon. Drizzle honey over the top and garnish with fresh mint leaves.
