Preparing the Mussels

Clean the Mussels

Rinse the mussels under cold water, scrubbing the shells with a brush to remove any dirt or barnacles. Remove the beards (the fibrous threads) from the mussels.

Cook the Mussels

In a large pot, combine the water and white wine. Bring to a boil over medium heat. Add the cleaned mussels, cover the pot, and steam for about 5-7 minutes or until the mussels have opened. Discard any mussels that do not open.

Making the Curry Sauce

Combine Sauce Ingredients

In a separate saucepan, combine the coconut milk, Thai red curry paste, diced pineapple, and diced heirloom tomatoes. Stir well to combine and bring to a simmer over medium heat.

Season the Sauce

Add lime juice, chopped cilantro, salt, and black pepper to the sauce. Adjust seasoning to taste and let simmer for about 5 minutes, allowing the flavors to meld.

Serving

Plate the Dish

Place the cooked mussels in a serving bowl and pour the curry sauce over them. Garnish with additional cilantro if desired.
