Method
For the French Fries
Prepare the Potatoes
Peel the Russet potatoes and cut them into thin strips, about 1/4 inch thick.
Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
Fry the Potatoes
Drain the soaked potatoes and pat them dry. Fry in batches until golden brown, about 5-7 minutes per batch.
Drain and Season
Remove the fries from the oil and drain on paper towels. Sprinkle with salt while hot.
For the Tarragon Aioli
Mix the Aioli
In a bowl, combine mayonnaise, finely chopped tarragon leaves, minced garlic, and lemon juice. Mix until smooth.
Season
Add salt and black pepper to taste, adjusting the seasoning as desired.
Serve
Serve the tarragon aioli alongside the hot French fries.
