Cake Preparation
Brown the Butter
In a saucepan, melt the unsalted butter over medium heat. Continue cooking until the butter turns golden brown and has a nutty aroma. Remove from heat and allow to cool slightly.
Mix the Wet Ingredients
In a large mixing bowl, combine the browned butter, granulated sugar, and brown sugar. Mix until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and milk.
Combine Dry Ingredients
In another bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped almonds.
Bake the Cake
Pour the batter into a greased 9-inch round cake pan. Bake at 350°F (175°C) for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow to cool before removing from the pan.
Raspberry Sauce Preparation
Prepare the Raspberry Sauce
In a saucepan over medium heat, combine fresh raspberries, granulated sugar, and lemon juice. Cook until the raspberries break down and the mixture thickens slightly. Remove from heat and let cool.
Serving
Serve the Cake
Slice the cooled cake and drizzle with raspberry sauce. Garnish with chopped Sicilian pistachios and a dusting of powdered sugar.
