Preparation Steps

  1. 1

    Activate the Yeast

In a small bowl, combine warm water and active dry yeast. Let sit for about 5-10 minutes until frothy.

  2. 2

    Mix the Dough

In a large mixing bowl, combine bread flour and salt. Add the frothy yeast mixture and mix until a dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

  4. 4

    First Rise

Place the dough in a lightly greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until doubled in size.

  5. 5

    Shape the Baguettes

Punch down the risen dough and divide it into two equal pieces. Shape each piece into a long baguette.

  6. 6

    Second Rise

Place the shaped baguettes on a floured baking sheet. Cover and let rise for another 30-45 minutes.

  7. 7

    Preheat the Oven

Preheat your oven to 475°F (245°C) while the baguettes are rising.

  8. 8

    Score and Bake

Using a sharp knife, make several diagonal slashes on top of each baguette. Bake in the preheated oven for 20-25 minutes until golden brown.

  9. 9

    Cool and Serve

Remove the baguettes from the oven and let cool on a wire rack. Serve warm with Rodolphe Le Meunier butter.
