Prepare the Pasta

Bring a large pot of salted water to a boil. Add the mezze maniche pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Sauté the Mushrooms

In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the chanterelle mushrooms and cook for 5-7 minutes until they are golden brown and tender.

Combine Ingredients

Add the cooked pasta to the skillet with the mushrooms. Toss to combine, adding reserved pasta water a little at a time until you reach your desired sauce consistency. Stir in the arugula, allowing it to wilt slightly.

Finish and Serve

Grate the red cow parmesan cheese over the pasta and season with salt and black pepper to taste. Toss everything together and serve hot.
