Prepare Jalapeños & Filling

Prepare peppers

Wear gloves. Rinse the jalapeños and pat dry. Slice each pepper lengthwise in half. Using a small spoon, remove and discard seeds and membranes (leave a little membrane if you want milder heat). Set hollowed peppers aside cut side up on a tray.

Make filling

In a medium mixing bowl, combine the softened cream cheese, shredded cheddar, crumbled bacon (reserve a little for topping if desired), chopped cilantro, minced garlic, kosher salt, and black pepper. Mix with a spatula or hand mixer until smooth and evenly combined, scraping sides. Taste and adjust salt if needed.

Fill peppers

Using a small spoon or piping bag, fill each jalapeño half with the cheese mixture, mounding slightly but not overstuffing so the filling stays inside during coating.

Set up dredging station

Place the flour in a shallow dish. In a second shallow dish, whisk the eggs and milk until combined. In a third shallow dish, combine panko breadcrumbs, grated parmesan, and smoked paprika; mix well.

Coat poppers

One at a time: lightly dust each filled jalapeño with flour, shaking off excess. Dip into the egg wash, letting excess drip off, then press into the panko mixture to coat completely. For an extra-crispy double coat, repeat egg wash and panko once more.

Fry or bake

Frying method (recommended for crispiest): Heat 1–1.5 inches of vegetable oil in a heavy skillet or pot to 350°F (175°C). Fry poppers in batches 2–3 minutes per side until golden brown and filling is heated through. Drain on paper towels. Baking method (lower oil): Preheat oven to 425°F (220°C). Place poppers on a parchment-lined baking sheet and spray with olive oil spray. Bake 15–20 minutes, turning once halfway, until golden and filling is hot. If using double coating, add 3–5 minutes.

Finish

If you reserved bacon bits, sprinkle over hot poppers. Let rest 2–3 minutes so filling sets slightly before serving.

Serve

Arrange poppers on a platter with lime wedges and a bowl of ranch or cilantro-lime crema for dipping. Serve warm.
