Method

Prepare and Pound Chicken

Trim and Flatten

Trim any visible fat from the chicken breasts. Place each breast between two sheets of plastic wrap or in a large resealable bag. Using a meat mallet or rolling pin, pound to an even thickness of about 1/2 inch (this ensures even cooking).

Season

Pat the chicken dry with paper towels. Drizzle both sides with 2 tbs olive oil total (about 1 tbs per breast). For 'Regular' style: season both sides with 1/2 tsp salt, 1/4 tsp black pepper, 1/4 tsp garlic powder and 1/4 tsp smoked paprika per breast. For 'BBQ' style: season lightly with 1/4 tsp salt and 1/4 tsp pepper per breast, then brush each side with about 1 tbs BBQ sauce; reserve remaining BBQ sauce for finishing. For 'Cajun' style: rub each breast with 1 tsp of cajun seasoning (use less if you prefer milder heat).

Cook Chicken

Heat a large skillet over medium-high heat. Add 1 tbs olive oil and swirl to coat. When oil is hot and shimmering, add the chicken breasts (do not overcrowd; cook in batches if needed). Cook undisturbed 4-5 minutes until a golden crust forms. Flip and reduce heat to medium; cook another 4-5 minutes until an instant-read thermometer inserted into the thickest part reads 165°F (74°C). For BBQ style, brush additional BBQ sauce on the tops of the breasts during the last minute of cooking. For Cajun style, spoon any residual seasoning into the pan while cooking to build flavor. Remove chicken to a plate and let rest 5 minutes before slicing.

Grill or Bake Option

Grill: Preheat grill to medium-high. Oil grates and grill 4-6 minutes per side until 165°F. Bake: Preheat oven to 400°F (200°C). Sear breasts 2 minutes per side in a hot ovenproof skillet, then transfer to oven and bake 8-12 minutes until 165°F.

Prepare Bread & Sauce

Mix sandwich sauce: in a small bowl combine 3 tbs mayonnaise, 1 tsp mustard and 1/2 tsp lemon juice. Taste and adjust salt or mustard to preference.

Butter the cut sides of your bread or rolls with the butter. Toast in a skillet over medium heat or under a broiler until lightly golden, about 1-2 minutes per side. If using cheese, place slices on the hot chicken or on the bread and melt briefly under cover or broiler for 30-60 seconds until softened.

Assemble Sandwich

Spread a tablespoon of the prepared sauce on both cut sides of each toasted bread piece. On the bottom half, layer lettuce leaves (2 leaves), 2–3 tomato slices, and a few rings of red onion if using.

Slice the rested chicken breast thinly against the grain and arrange on top of the tomatoes. If BBQ style, drizzle any remaining BBQ sauce over the sliced chicken. Add pickles if desired and sprinkle chopped parsley over the chicken for freshness.

Close the sandwich with the top half of the bread. Press gently, slice in half if desired, and serve immediately.

Serving & Storage

Serve the sandwich warm with optional sides such as fries, coleslaw, or a simple salad. Leftover cooked chicken will keep in an airtight container in the refrigerator for up to 3 days; store sauce separately and assemble fresh to preserve bread texture.
