1. Wash and Peel Potatoes

Thoroughly wash the Russet potatoes under cold running water. Peel the skin off using a vegetable peeler.

2. Cut into Shoestrings

Slice each potato into thin, even strips about 1/8 inch thick. Aim for uniformity to ensure even cooking.

Soaking

3. Soak the Potatoes

Place the cut potato strips in a large bowl filled with cold water. Let them soak for at least 30 minutes. This helps remove excess starch.

Frying

4. Heat the Oil

In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

5. Dry the Potatoes

After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

6. Fry the Potatoes

Carefully add a handful of dried potato strips to the hot oil. Fry in batches for about 3-4 minutes or until golden brown and crispy. Avoid overcrowding the pot.

7. Drain and Season

Once golden, use a slotted spoon to remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt, black pepper, garlic powder, and paprika to taste.
