Appetizers
- 1
In a large skillet, heat olive oil over medium heat. Add red onion and garlic; sauté until translucent, about 2 minutes. Add bell peppers, zucchini, and corn; cook 6-8 minutes, until vegetables are tender and lightly caramelized. Stir in black beans; season with cumin, smoked paprika, chili powder, salt, and pepper; cook 1-2 more minutes; remove from heat.
- 2
In a small bowl, mash avocado with lime juice and cilantro until smooth. Season with salt to taste.
- 3
Warm tortillas in a dry skillet or microwave until pliable, 15-30 seconds per side; keep wrapped in a clean towel to stay warm.
- 4
To assemble, lay a tortilla flat. Spread a spoon of avocado crema over the tortilla, top with a generous portion of the veggie-bean mixture, sprinkle with cheese if using, add a dollop of sour cream if desired, and drizzle with salsa. Fold in the sides and roll tightly into a burrito. Repeat with remaining tortillas.
- 5
Cut each burrito in half for easier handling. Arrange on a serving platter with extra salsa and crema on the side.
