Method

Shells and base

  1. 1

    Prepare oil for frying (optional)

In a deep skillet or wide pan, add vegetable oil to a depth of about 1/2 inch (1.25 cm) and heat over medium heat until shimmering.

  2. 2

Working in batches, fry one corn tortilla at a time in the hot oil until crisp and lightly golden, about 45-60 seconds per side. Use tongs to flip.

  3. 3

Drain fried shells on paper towels and sprinkle lightly with salt if desired. Let them cool slightly until firm and crisp.

Beans and cheese

  1. 4

Stir the canned refried beans in a small saucepan over medium heat until hot and smooth, about 3–5 minutes.

  2. 5

Arrange shredded cheese nearby so it can be easily sprinkled during assembly.

Assemble

  1. 6

Spread about 1–2 tablespoons of refried beans onto each crisp tortilla as a base.

  2. 7

Sprinkle shredded cheese over the beans.

  3. 8

If you like melted cheese, briefly return the topped shells to a warm oven or toaster oven just until the cheese melts, about 1–2 minutes.

Toppings

  1. 9

Top each tostada with shredded lettuce, diced tomatoes, and diced avocado.

  2. 10

Drizzle crema or spoon a dollop over the toppings, then add salsa.

Garnish and serve

  1. 11

    Sprinkle cilantro over the tostadas.

  2. 12

Serve with lime wedges on the side. Season with salt to taste if needed.
