    Prepare the chile base

    Toast the guajillo chiles in a dry skillet over medium heat until fragrant and slightly darkened, about 1-2 minutes per side. Remove stems and seeds, then soak in hot water for 15 minutes until soft. Drain, reserving 60 ml of soaking liquid. Remove any tough veins and roughly chop.

    Sauté aromatics

    In a large skillet, heat olive oil over medium heat. Add onion and sauté until translucent, about 5 minutes. Add garlic and jalapeño and cook 1-2 minutes until fragrant.

    Create the chili sauce

    In a blender, combine rehydrated guajillo chiles, crushed tomatoes, and 60 ml of the soaking liquid. Blend until smooth. Pour into the skillet with aromatics, add chicken broth, oregano, cumin, and paprika. Simmer for 8-10 minutes, stirring occasionally. Season with salt and pepper to taste.

    Cook the shrimp in sauce

    Increase heat to a gentle simmer. Add the shrimp to the sauce and cook until pink and opaque, about 4-6 minutes depending on size. Stir in lime juice and cilantro.

    If using cream, stir it in now to add richness. Taste and adjust salt and heat. Serve hot with warm tortillas or rice and garnish with additional cilantro if desired.
