    Rinse the whole fish under cold water, pat dry with paper towels, and score the skin with 3-4 shallow diagonal cuts on each side to promote even cooking.

    Season the cavity and exterior with 1 teaspoon kosher salt, 0.5 teaspoon black pepper, 1 teaspoon paprika, and 1 teaspoon garlic powder.

    In a shallow bowl, whisk together the all-purpose flour and cornmeal. In a second bowl, whisk the eggs with 2 tablespoons milk or water until smooth.

    Dip the fish into the egg wash, letting excess drip off, then thoroughly coat with the flour-cornmeal mixture. Shake off any excess.
