    Prep and preheat

    Preheat the oven to 375°F (190°C). Line a sheet pan with parchment or lightly oil the pan.

    Prepare filling

    In a skillet over medium heat, cook the ground beef until browned, then drain any excess fat. In a mixing bowl, combine the cream cheese, shredded cheddar, garlic powder, chopped green onions, salt, pepper, and the cooked beef until fully blended.

    Prepare jalapeños

    Rinse the jalapeño peppers. Wearing gloves, slice a small slit lengthwise on each pepper to create a pocket, and gently scoop out seeds and membranes with a spoon.

    Stuff peppers

    Fill each jalapeño pepper with a generous scoop of the filling, pressing to pack it in.

    Wrap with bacon and secure

    Wrap each stuffed pepper with a slice of bacon. Secure with a toothpick if needed.

    Bake

    Place the prepared peppers on the sheet pan. Lightly brush or spray with olive oil. Bake for 25-30 minutes, until peppers are tender and bacon is crispy. If desired, finish under the broiler for 1-2 minutes to crisp bacon further.

    Remove from oven, let rest 5 minutes. Garnish with chopped parsley or cilantro (optional) and serve as a hearty main course.
