Cook beef
In a skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up with a spatula, until browned. Sprinkle the taco seasoning mix over the beef, and add a small amount of water if required by the seasoning. Simmer until the sauce thickens and the flavors meld. Remove from heat.

Make guacamole
Halve the avocados and scoop the flesh into a bowl. Mash to desired texture, then fold in the lime juice, finely chopped red onion, diced tomato, cilantro, and salt. Taste and adjust salt as needed.

Prepare optional toppings
If using, set out sour cream and shredded cheese as toppings for the tacos.

Assemble
Place a portion of the seasoned beef on each tortilla. Top with a dollop of guacamole, and finish with optional toppings (sour cream and shredded cheese). Garnish with extra cilantro and a squeeze of lime if desired.
