    Peel the potatoes and cut into uniform fries about 1/4 inch (0.6 cm) thick. Place in a large bowl as you cut.

    Rinse the cut fries under cold water, then cover with fresh cold water and soak for 30-60 minutes to remove surface starch.

    If using cornstarch for extra crispness, drain the fries after soaking, pat dry thoroughly, and toss with 1 tablespoon cornstarch until evenly coated.

    Pat the fries completely dry with towels to remove surface moisture.

    In a large, heavy-bottomed pot or deep fryer, heat vegetable oil to 325°F (165°C). Do not fill the pot more than halfway.

    Working in batches, fry the potatoes in the preheated oil for 3-4 minutes until they are pale and just tender. Remove with a slotted spoon and drain on paper towels.

    Increase oil temperature to 375°F (190°C). Return the fries to the hot oil in batches and fry for 2-3 minutes until deep golden and crisp.
