Preheat the oven to 375°F (190°C). In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, 4-5 minutes. Stir in ground cumin, chili powder, garlic powder, and salt; cook until aromatic, about 1 minute.

In a small saucepan, warm the remaining enchilada sauce (2nd cup) over low heat and keep warm for dipping and topping.

Dip each tortilla quickly into the warm sauce to soften, then drain.

Spoon a generous amount of the chicken mixture onto the center of each tortilla, roll tightly, and place seam-side down in a 9x13-inch baking dish.

Repeat with the remaining tortillas, filling and lining the dish as needed.

Pour the remaining sauce over the rolled tortillas in the baking dish.

Sprinkle the shredded Monterey Jack cheese evenly over the top.

Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbling.
