Main Menu

  1. 1

Preheat the oven to 375°F (190°C). In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, 4-5 minutes. Stir in ground cumin, chili powder, garlic powder, and salt; cook until aromatic, about 1 minute.

  2. 2

Add the shredded chicken and 1 cup of enchilada sauce to the skillet. Stir in chopped cilantro and simmer 2-3 minutes until heated through.

  3. 3

In a small saucepan, warm the remaining enchilada sauce (2nd cup) over low heat and keep warm for dipping and topping.

  4. 4

Dip each tortilla quickly into the warm sauce to soften, then drain.

  5. 5

Spoon a generous amount of the chicken mixture onto the center of each tortilla, roll tightly, and place seam-side down in a 9x13-inch baking dish.

  6. 6

Repeat with the remaining tortillas, filling and lining the dish as needed.

  7. 7

Pour the remaining sauce over the rolled tortillas in the baking dish.

  8. 8

Sprinkle the shredded Monterey Jack cheese evenly over the top.

  9. 9

Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbling.

  10. 10

Remove from the oven. Garnish with additional chopped cilantro if desired and serve with a dollop of sour cream.
