Method

Enchilada Combo - Chicken Enchiladas

    Filling

    In a skillet, heat 1 tablespoon olive oil over medium heat. Add diced onion and sauté until translucent. Stir in shredded chicken, 1 teaspoon ground cumin, 1/2 teaspoon garlic powder, and 1/2 teaspoon salt. Cook 2-3 minutes to meld flavors. Remove from heat and stir in 2 tablespoons chopped cilantro.

    Prepare tortillas

    Wrap 8 small corn tortillas in a damp towel and microwave 30 seconds to soften for easy rolling.

    Assemble enchiladas

    Spread about 1/4 cup of green chile sauce in the bottom of a 9x13-inch baking dish. Place 2-3 tablespoons of chicken filling in each tortilla, roll tightly, and place seam-side down in the pan.

    Sauce and cheese

    Pour the remaining 1 3/4 cups of enchilada sauce over the rolled tortillas. Sprinkle 1/2 cup shredded cheese on top.

    Bake at 375°F (190°C) for 15-20 minutes, until cheese is melted and bubbly. Remove from oven and let rest 5 minutes.

    Beef filling

    In a large skillet, heat a tablespoon of oil. Sauté diced onion until translucent, add ground beef and cook until browned. Drain excess fat. Stir in taco seasoning and cook 1 minute to bloom spices.

    Warm 1.5 cups red enchilada sauce in a small saucepan over medium heat.

    Warm 8 small tortillas to soften (microwave or steam).

    Place 2-3 tablespoons of beef filling and a small handful of cheese on each tortilla, roll tightly, and arrange seam-side down in a baking dish.

    Rinse 1 cup long-grain white rice. In a pot, heat 1 tablespoon oil and lightly toast rice until glossy. Add 2 cups water or broth, bring to a boil, then reduce to a simmer, cover, and cook for 15-18 minutes. Remove from heat and let rest 5 minutes.
