Prep and separate
Crack the two eggs and carefully separate the whites into a medium bowl and the yolks into a small separate bowl. Preheat two nonstick skillets over medium heat and have the butter ready for the whites while the olive oil awaits the yolks.

Season and whisk whites
To the whites, add a pinch of salt and pepper. If using milk, whisk in 2 tablespoons to lighten the mixture and create a fluffier texture. This step ensures even seasoning as the whites cook.

Cook whites
In the first skillet, melt 1 tablespoon butter. Pour in the seasoned whites and cook slowly over medium heat, gently stirring or folding occasionally until the whites are just set and still glossy in the center. Remove from heat and keep warm.

Prepare yolks
Season the yolks lightly with a pinch of salt and pepper. Keep them in their small bowl, ready to cook in the second skillet.

Cook yolks
In the second skillet, heat 1 teaspoon olive oil. Gently slide in the yolks and cook for about 1–2 minutes, until the outer edges begin to set but the centers remain runny (or cook longer if you prefer firmer yolks). If desired, you can cover briefly to trap steam for a slightly firmer yolk.

Toast and plate
Meanwhile, toast the bread slices until golden. Arrange the whites on one side of the plate and the yolks on the opposite side. Fan out the tomato slices on the plate and place a few on each side as desired. Drizzle a little olive oil over the tomatoes and garnish with chopped chives if using.
