Dough Preparation

    Prepare wet ingredients

    In a medium saucepan, combine water, 2 tablespoons granulated sugar, and 1/2 teaspoon salt. Bring to a gentle simmer over medium heat, stirring to dissolve the sugar and salt.

    Add oil and incorporate flour

    Stir in 2 tablespoons vegetable oil. Add 1 cup all-purpose flour all at once and continue stirring until the mixture forms a cohesive dough that pulls away from the sides of the pan.

    Cool and prepare piping

    Remove dough from heat and let cool for 5–10 minutes until comfortable to handle. If using a piping bag with a star tip, fit the bag with the tip now.

Frying

    Heat oil

    Pour 4 cups vegetable oil into a heavy pot. Heat to 375°F (190°C). Use a candy thermometer to monitor the temperature.

    Pipe and fry churros

    Fill a piping bag fitted with a large star tip with the cooled dough. Pipe 4–6 inch strips directly into the hot oil. Cut with scissors as you pipe.

    Cook until golden

    Fry in batches for 2–3 minutes per side, until the churros are golden brown and crisp. Turn as needed for even color.

    Drain

    Transfer fried churros to a paper towel–lined tray to drain excess oil. Allow to cool slightly before coating.

Coating and Serving

    Make cinnamon sugar

    In a shallow dish, whisk together 1/2 cup granulated sugar and 1 teaspoon ground cinnamon.

    Coat churros

    While still warm, roll or toss them in the cinnamon sugar until evenly coated.

    Serve churros warm with chocolate dipping sauce or your favorite dipping sauce.
