    Wash and scrub the potatoes. Peel if desired (optional). Slice potatoes into thin rounds about 1/8 inch thick. Place slices in a large bowl of cold water and soak for 20-30 minutes to remove excess starch.

    Drain potato slices and pat completely dry with kitchen towels. In a heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C). Maintain temperature as you work in batches.

    In a large bowl, whisk together cornstarch, paprika, salt, and black pepper. Add the potato slices in batches and toss until each slice is evenly coated with the seasoned starch.

    Carefully add coated potato slices to the hot oil in batches. Fry for 2–4 minutes per batch, or until chips are golden and crisp. Do not overcrowd the pot. Use a slotted spoon to transfer chips to a rack or paper towels to drain excess oil.

    While chips are still hot, sprinkle a pinch more salt to taste. Toss gently to coat, then serve immediately with dipping sauces like ketchup, aioli, or salsa.
