Prepare filling
Heat a large skillet over medium heat with olive oil. Add onion and bell pepper; sauté until softened, about 3-4 minutes. Add garlic; cook 30 seconds. Stir in shredded chicken, cumin, chili powder, paprika, salt, and pepper. Cook 2-3 minutes until heated through and spices are fragrant. Remove from heat and fold in sour cream, cilantro, and lime juice.

Warm tortillas
Wrap tortillas in damp paper towels and warm in the microwave 20-30 seconds until pliable.

Assemble chimichangas
Spread a few spoonfuls of filling in the center of each tortilla and sprinkle with shredded cheese. Fold in the sides and roll tightly to enclose filling. If desired, secure with a toothpick.

Fry
In a deep skillet or Dutch oven, heat vegetable oil to 350°F (175°C). Fry the rolled chimichangas, 2-3 minutes per side, until deep golden brown. Remove and drain on paper towels. Remove toothpicks if used.

Serve hot with extra sour cream, salsa, or guacamole on the side.
