Prepare filling
In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic; sauté until translucent and fragrant, about 3-4 minutes.

Brown the beef
Add the ground beef to the pan. Break it up with a spoon and cook until fully browned, about 5-7 minutes. Drain excess fat.

Season and enrich
Stir in chili powder, ground cumin, smoked paprika, oregano, and a pinch of salt and pepper. Cook about 1 minute to bloom spices.

Add beans and corn
Fold in black beans and corn kernels. Cook 2-3 minutes until heated through.

Finish filling
Turn off heat and stir in chimichurri sauce and fresh lime juice. Taste and adjust salt. If the mixture is dry, loosen with a splash of water.

Assemble burros
Lay a warmed tortilla on a flat surface. Place about 1/4 cup filling in the center. Top with 2-3 tablespoons shredded cheddar. Drizzle a little more chimichurri if desired. Fold in the sides and roll tightly to enclose the filling.

Place rolled burritos seam-side down on a parchment-lined baking sheet. Brush tops lightly with vegetable oil. Bake at 400°F (205°C) for 15-20 minutes, flipping halfway, until the tortillas are crisp and golden.

Serve hot with avocado crema (or sour cream) on the side and a sprinkle of chopped cilantro. Optional: extra chimichurri drizzle on top.
