    Prep and heat the skillet

    Place a nonstick skillet over medium heat. Add 1 tablespoon unsalted butter and let it melt, coating the surface evenly.

    Toast the bread

    Toast 2 slices of bread until golden and crisp to your liking. If desired, brush lightly with olive oil after toasting for extra sheen.

    Cook the divorced eggs – sunny-side and scrambled

    Crack 1 egg into the left half of the skillet and cook until the white is set and the yolk remains runny (sunny-side up). In the right half, whisk the second egg with 2 tablespoons milk, 0.25 teaspoon salt and 0.25 teaspoon pepper, then pour into the pan and scramble gently until creamy and just set.

    Cheese and finish

    Sprinkle 1/4 cup shredded cheddar cheese over the scrambled eggs and allow it to melt into creamy folds. Keep the sunny-side egg undisturbed so the yolk stays runny.

    Plate and garnish

    Transfer the sunny-side egg to the left side of the plate and the cheesy scrambled eggs to the right to keep them visually separated (the 'divorced' presentation). Sprinkle 1 tablespoon finely chopped fresh chives over the eggs. Serve with the toasted bread on the side.
