Beef Flauta - Ingredients

Method

Beef Flauta - Directions

  1. 1

    Prepare filling

Heat 1 tablespoon of oil in a large skillet over medium heat. Add chopped onion and jalapeño; sauté 3-4 minutes until softened. Add garlic and cook 30 seconds more.

  2. 2

    brown beef

Add ground beef to the skillet; cook until browned, breaking up with a spoon. Drain excess fat.

  3. 3

    season filling

Stir in chili powder, cumin, paprika, salt, and pepper. Cook for 1 minute to bloom spices.

  4. 4

    add liquids

Pour in tomato sauce and beef broth; simmer 6-8 minutes until slightly thickened. Stir in cilantro if using.

  5. 5

    cheese and cool filling

If using cheese, stir in shredded cheese until just melted and fully incorporated into the beef mixture. Remove from heat.

  6. 6

    prep tortillas

Warm tortillas to make them flexible: wrap in a damp towel and microwave 20-30 seconds, or lightly warm in a dry skillet.

  7. 7

    assemble flautas

Spoon about 1-2 tablespoons of filling onto one edge of each tortilla. Roll tightly toward the opposite edge and secure with a toothpick if desired.

  8. 8

    fry

In a deep skillet or Dutch oven, heat oil to 350-375°F (175-190°C). Fry rolled tortillas in batches, seam side down, 2-3 minutes per side until crisp and golden. Drain on paper towels.

  9. 9

    bake option

For a lighter method, preheat oven to 425°F (220°C). Place flautas on a parchment-lined sheet, lightly brush with oil, and bake 15-20 minutes, turning halfway.

  10. 10

    serve

Serve hot with salsa, guacamole, crema, and lime wedges.
