Make fajita seasoning
In a small bowl mix together chili powder (2 tsp), ground cumin (1 tsp), paprika (1 tsp), dried oregano (0.5 tsp), salt (0.5 tsp), and black pepper (0.25 tsp) to create the fajita seasoning.

Prepare beef
Trim the flank steak and slice it against the grain into thin strips about 1/4 inch thick.

Season beef
Toss the beef strips with 1 tablespoon olive oil and about half of the fajita seasoning until evenly coated.

Sear beef
Heat a large skillet over high heat. In batches, sear the seasoned beef until browned, about 2–3 minutes per batch. Transfer to a plate when done.

Cook vegetables
In the same skillet, add the remaining 1 tablespoon olive oil. Sauté the red and green bell peppers and yellow onion until tender and slightly charred, about 5–7 minutes.

Add garlic and remaining seasoning
Add minced garlic and the remaining fajita seasoning; cook for 30–60 seconds until fragrant.

Combine beef and lime
Return beef to the skillet. Squeeze in juice from 1 lime and toss to coat; cook 1–2 minutes until everything is hot and well mixed.

Finish and serve
Stir in chopped cilantro, season to taste with additional salt if needed, and keep warm. Warm the flour tortillas in a dry skillet or microwave and serve fajitas with tortillas and lime wedges if desired.
