Marinade & Prep

    Make carne asada marinade

    In a bowl, whisk together orange juice, lime juice, minced garlic, cumin, chili powder, and salt.

    Marinate steak

    Place flank steak in a zip-top bag or shallow dish. Pour marinade over the steak, seal, and refrigerate for at least 1 hour (ideally 4–6 hours).

Cook Carne Asada

    Cook steak

    Preheat grill or heavy skillet over high heat. Remove steak from marinade and pat dry. Grill 3–5 minutes per side for medium-rare. Let rest 5 minutes, then slice thinly against the grain.

Fries

    Prepare fries

    Preheat oven to 425°F (220°C). Spread frozen fries on a sheet pan and bake according to package directions until crisp, about 20–25 minutes, flipping halfway. If using fresh potatoes, cut into fries, soak 20 minutes, pat dry, toss with 1–2 Tbsp oil, and bake until golden.

Assemble & Finish

    Assemble fries

    Spread hot fries on a serving platter. Sprinkle shredded cheese over the fries and return to oven or broiler for 1–2 minutes until melted.

    Top with carne asada

    Top melted-cheese fries with sliced carne asada.

    Add toppings

    Dollop pico de gallo, guacamole, and sour cream over the meat. Sprinkle cilantro, jalapeño slices, and squeeze lime wedges over the top.
