Method

Enchilada

  1. 1

    Prep aromatics

In a skillet over medium heat, add 1 tablespoon olive oil. Sauté diced onion (0.25 cup) until translucent, about 3 minutes. Add minced garlic (1 clove) and cook 30 seconds until fragrant.

  2. 2

    Bloom the spices and fill

Stir in ground cumin (0.5 teaspoon) and chili powder (0.5 teaspoon). Add shredded chicken (0.5 cup) and cook 1-2 minutes to bloom the spices with the meat.

  3. 3

    Add sauce and veggies

Pour in enchilada sauce (0.25 cup). Mix in black beans (0.25 cup) and corn kernels (0.25 cup). Simmer 2-3 minutes to heat through and combine flavors.

  4. 4

    Wrap the filling

Warm the large corn tortilla in a dry skillet until pliable. Spoon about 2-3 tablespoons of filling onto the center of the tortilla. Roll tightly and place seam-side down in a baking dish.

  5. 5

    Top and bake

Pour the remaining enchilada sauce (0.25 cup) over the rolled tortillas. Sprinkle shredded cheese (0.25 cup) on top. Bake at 375°F (190°C) for 15-20 minutes, until cheese is melted and bubbly.

  6. 6

    Garnish and serve

Remove from oven and garnish with cilantro (1 tablespoon). Let rest 2 minutes, then serve hot with a side of additional salsa if desired.

Taco

  1. 7

    Season and brown beef

In a skillet over medium heat, brown the cooked ground beef (0.5 cup). Stir in taco seasoning (0.5 tablespoon) and water (2 tablespoons); simmer 5 minutes until sauce thickens and beef is well coated.

  2. 8

    Warm tortilla

Warm the small corn tortilla (1 pcs) in a dry skillet for about 20-30 seconds per side until pliable.

  3. 9

    Assemble toppings

Layer shredded lettuce (0.25 cup) and diced tomato (0.125 cup) on the tortilla. Top with the seasoned beef (0.5 cup) and sprinkle shredded cheese (0.25 cup). Add avocado slices (0.25 pcs) and cilantro (1 tablespoon).

  4. 10

    Finish and serve

Finish with sour cream (0.25 cup) and pico de gallo (0.25 cup). Serve immediately, with additional salsa on the side if desired.
