Prepare the Batter
Mix the Dry Ingredients
In a large mixing bowl, combine 1 cup of all-purpose flour, 0.5 cups of cornstarch, 1 teaspoon of baking powder, 0.5 teaspoons of salt, 0.25 teaspoons of black pepper, and 0.5 teaspoons of garlic powder. Whisk together until all dry ingredients are well blended.
Add Cold Water
Gradually add 1 cup of cold water to the dry mixture, whisking continuously to create a smooth batter. Ensure there are no lumps. Set aside for about 15 minutes.
Prepare the Onions
Slice the Onions
Peel the 2 large onions and slice them into 1/4-inch thick rings. Carefully separate the rings and set them aside.
Heat the Oil
In a large, deep skillet or pot, heat 4 cups of vegetable oil over medium-high heat. Use a thermometer to check that the oil reaches 350°F (175°C).

Carefully place the battered onion rings into the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and crispy, turning as necessary.
Drain and Serve
Using a slotted spoon, remove the golden onion rings from the oil and place them on a plate lined with paper towels to drain excess oil. Serve immediately while hot.
