Preparation
Chill glass and ingredients
Place a large wine glass in the freezer for 10 minutes or fill it with ice water to chill while you prepare the other components. Ensure Prosecco is well chilled (about 45°F / 7°C).
If using simple syrup and you prefer a slightly sweeter spritz, have the syrup ready. Freshly squeeze lemon juice and measure Aperol and peach liqueur.
Build the Cocktail
Add ice
Discard the ice water from the chilled glass if used, then fill the wine glass about three-quarters full with large ice cubes (or a generous handful of regular ice).
Pour liqueurs and citrus
Pour 2 oz Aperol and 0.5 oz peach liqueur over the ice followed by 0.5 oz fresh lemon juice. If you want a sweeter drink, add 0.25 oz simple syrup. Stir gently once to combine (about 4–5 slow turns) to avoid flattening the bubbles later.
