Taco Baskets (makes 4 baskets)
Method
Taco Baskets (assembly & cooking)
- 1
Prepare tortilla baskets
Heat 1 cup vegetable oil in a deep skillet or medium pot to 350°F (175°C). While oil warms, shape each flour tortilla into a basket: fold the tortilla gently to form a deep well and press it into an inverted small oven-safe bowl or use an oven rack or a muffin tin to support the shape. When oil reaches temperature, carefully fry one tortilla at a time for 45–60 seconds per side, turning once, until golden and crisp. Remove with tongs and drain on paper towels. Alternatively, for a baked option: preheat oven to 375°F (190°C), press tortillas into an inverted muffin tin or over oven-safe bowls, brush lightly with oil, and bake 10–12 minutes until golden and crisp.

Cook the seasoned ground beef
In a medium skillet over medium-high heat, add the ground beef and chopped onion. Cook, breaking meat into small pieces, until beef is browned and onion is softened, about 6–8 minutes. Drain excess fat if desired, leaving about 1 tablespoon in skillet. Add minced garlic and cook 30 seconds until fragrant. Stir in chili powder, ground cumin, smoked paprika, tomato paste, and beef broth (or water). Reduce heat to medium-low and simmer 3–4 minutes, stirring, until mixture thickens slightly. Season with 1/2 tsp salt and 1/4 tsp black pepper. Taste and adjust seasoning.

Prepare toppings
While beef simmers and baskets cool, combine shredded lettuce, diced tomatoes, and sliced green onions in a small bowl. Portion out shredded cheese, sour cream, salsa, and chopped cilantro in separate bowls for easy assembly.

Assemble Taco Baskets
Fill each crisp tortilla basket with about 1/4 of the seasoned beef (roughly 4 oz). Top the beef with about 1/4 cup shredded cheese so it melts slightly from the warm meat. Add a handful (about 1/4 cup) of shredded lettuce and 2 tablespoons diced tomatoes to each basket. Spoon 1 tablespoon sour cream and 2 tablespoons salsa over each, and sprinkle with sliced green onions and 1/2 tablespoon chopped cilantro if using. Serve each basket with a lime wedge on the side for squeezing.

Serving & make-ahead notes
Serve immediately while the baskets are crisp. If assembling ahead, store fried tortillas in an airtight container at room temperature for up to 6 hours (to keep crisp). Store cooked beef in the refrigerator for up to 3 days; reheat gently before filling baskets. For a vegetarian variant, substitute cooked seasoned black beans (1 can, drained) for the beef and follow the same assembly.
