    Prep and rinse

    Cut potatoes into 1/4- to 1/2-inch fries. Place in a bowl of cold water and soak 20–30 minutes to remove excess starch. Drain and pat completely dry with kitchen towels.

    Par-fry (optional for crispier fries)

    Heat oil in a heavy pot or deep fryer to 325°F (163°C). Fry potatoes in batches for 3–4 minutes until pale and just tender but not browned. Remove to a wire rack or paper towel-lined tray to drain.

    Final fry

    When ready to serve, heat oil to 375°F (190°C). Fry the par-fried potatoes in batches for 2–3 minutes until golden brown and crisp. Drain on paper towels, immediately season with 1 tsp salt and 1/2 tsp black pepper, and keep warm.

Steak

    Season steak

    Toss the thinly sliced steak with 1 tbsp vegetable oil, 1 tsp Worcestershire sauce, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp salt, and 1/4 tsp black pepper. Let sit 5–10 minutes while fries cook.

    Cook steak quickly

    Heat a large skillet or flat-top over high heat until very hot. Add the seasoned steak in an even layer and sear without moving for 30–45 seconds, then toss and cook another 30–45 seconds until browned but still tender. Remove from pan and keep warm. Do not overcook—thin slices cook very fast.

Vegetables & Toppings

    Sauté vegetables

    In the same hot skillet used for the steak, add a quick splash of oil if needed. Add the sliced onion, bell pepper, and mushrooms (if using) with 1/4 tsp salt and 1/8 tsp black pepper. Sauté over medium-high heat for 3–4 minutes until softened and slightly caramelized. Push veggies to the side.

    Combine steak and veggies

    Return the cooked steak to the skillet with the vegetables and toss briefly to warm and combine, 30–60 seconds. Taste and adjust seasoning if necessary.

Cheese & Finish

    Assemble Philly Fries

    Place the hot fries on a large serving platter or individual plates. Spoon the steak and vegetable mixture evenly over the fries.

    Add cheese

    For provolone: lay the provolone slices over the steak and veggies and cover briefly with a lid or aluminum foil for 30–60 seconds to melt. For cheese sauce: drizzle warm cheese sauce over the steak and fries. You can also combine both for extra richness.

    Garnish and serve

    Sprinkle chopped parsley over the top if desired. Serve immediately while hot and melty.
