Prep cauliflower
Trim and break 1 medium head of cauliflower into bite-size florets, aiming for pieces about 1 to 1.5 inches. Pat dry with paper towels so batter adheres.

Make batter
In a medium bowl whisk together 1 cup all-purpose flour, 1 cup water, and 1 large egg until smooth. Stir in 1 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp smoked paprika, 1 tsp kosher salt, and 1/2 tsp black pepper. Batter should be thick enough to coat but still pourable; add up to 1–2 tbsp more water if too thick.

Prepare dredge
Place 1 cup panko breadcrumbs in a shallow bowl or rimmed plate. Spread into an even layer for easy coating.

Coat florets
Working in batches, dip each cauliflower floret into the batter, letting excess drip off, then press into panko to fully coat. Transfer coated florets to a wire rack or parchment-lined sheet. Repeat until all florets are coated. For extra-crispy results, let coated florets rest 10 minutes to allow the coating to set.

Heat oil and fry
Pour about 2 cups neutral oil (vegetable, canola, or sunflower) into a deep skillet or heavy-bottomed pot to a 1½–2 inch depth. Heat over medium-high until oil reaches 350°F (175°C) or a small piece of batter sizzles and browns in ~30 seconds. Fry cauliflower in batches—do not overcrowd—about 3–4 minutes per batch until golden brown and crisp. Use a slotted spoon or spider to transfer fried florets to a paper towel–lined plate to drain.

Make sauce
In a small saucepan over low heat, combine 3 tbsp unsalted butter, 3/4 cup hot sauce, 1 tsp honey (or brown sugar), 1 tsp apple cider vinegar, 1/2 tsp Worcestershire sauce, 1/4 tsp cayenne (optional), and 1/4 tsp salt. Warm gently, stirring until butter is fully melted and sauce is smooth and slightly emulsified, about 2–3 minutes. Taste and adjust sweetness, salt, or heat as desired.

Toss florets in sauce
Place drained fried cauliflower into a large bowl. Pour the warm buffalo sauce over the florets and gently toss until pieces are evenly coated. For a saucier finish, return coated florets to a 350°F (175°C) oven on a baking sheet for 4–6 minutes to set the sauce; this also reheats the cauliflower and helps the sauce cling.

Arrange buffalo cauliflower bites on a platter. Garnish with chopped fresh parsley if using. Serve immediately with 1/2 cup blue cheese or ranch dressing and celery sticks alongside for dipping.

Leftovers can be stored in an airtight container in the refrigerator up to 3 days. Re-crisp in a 375°F (190°C) oven for 8–10 minutes before serving and reheat sauce separately to toss if desired.
