Remove ground beef from refrigerator and form into 4 evenly sized patties (about 6–7 oz each). Press a shallow dimple in the center of each patty to prevent bulging while cooking.

Season both sides of each patty evenly with salt, black pepper, garlic powder, and onion powder.

If using, mix mayonnaise with 2 tablespoons of BBQ sauce in a small bowl to make a lightly flavored spread; set aside.

Thinly slice red onion into rings and separate. Drain and slice pickles if not pre-sliced.

Crumble the blue cheese if not pre-crumbled and measure out 1 cup.
Cook Patties

Place patties on the hot surface. Cook 3–4 minutes without moving to develop a crust.

Flip patties and cook another 3–4 minutes for medium doneness (internal temp ~160°F / 71°C for ground beef). If you prefer cheese, place a slice of cheddar or American on each patty about 1 minute before removing from heat to allow it to melt.

During the last 30–60 seconds of cooking, brush the top of each patty with about 1 tablespoon of sweet & smoky BBQ sauce so the sauce warms and adheres to the meat.

Remove patties and let rest on a plate for 2 minutes.

If using the mayonnaise-BBQ spread, spread about 1 tablespoon onto the bottom bun of each sandwich. Otherwise, spread mayonnaise or a thin layer of BBQ sauce to taste.
Assemble

Place the rested burger patty on the bottom bun (sauced-side up).

Generously sprinkle about 1/4 cup blue cheese crumbles onto each patty so some melts slightly against the warm meat. If you prefer a stronger blue flavor, use up to 1/3 cup per sandwich.

Drizzle an additional tablespoon of BBQ sauce over the blue cheese on each sandwich (adjust to taste).

Top with 3–4 pickle slices and a few rings of thinly sliced red onion per sandwich.

Serve immediately while hot. Offer extra BBQ sauce and blue cheese on the side for guests to add more.

Store leftover patties refrigerated in an airtight container for up to 3 days; store buns separately to avoid sogginess.
