Preparation
1. Prepare the Chicken
Pat the chicken breasts dry with paper towels. Season both sides with salt and black pepper.
2. Prepare the Mushrooms
Clean the mushrooms with a damp cloth and slice them thinly. Peel and mash the roasted garlic.
3. Cook the Capellini
Bring a large pot of salted water to a boil. Add the capellini and cook according to package instructions until al dente. Drain and set aside.

4. Sear the Chicken
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
5. Cook the Mushrooms
In the same skillet, add the butter and sliced mushrooms. Sauté for about 5-7 minutes until the mushrooms are tender and browned. Stir in the mashed roasted garlic and cook for an additional minute.
6. Make the Marsala Sauce
Pour the Marsala wine into the skillet with the mushrooms. Bring to a boil, scraping the bottom of the skillet to deglaze. Allow to simmer for about 5 minutes until slightly thickened.
7. Combine Chicken and Sauce
Return the seared chicken breasts to the skillet, spooning the sauce over them. Let simmer for another 2-3 minutes to meld the flavors.
8. Serve
Plate the cooked capellini, top with the chicken Marsala and sauce, and garnish with fresh parsley.
