Method
Calamari Preparation
Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.
Make the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper.
Dunk in Buttermilk
Dip each calamari ring into the buttermilk to coat, then dredge in the flour mixture until well coated.
Heat the Oil
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).
Fry the Calamari
Fry the calamari rings in batches for about 2-3 minutes or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
Marinara Sauce Preparation
Add Tomatoes and Spices
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Bring to a simmer.
Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.
