    Poach the Rabbit

    In a large pot, heat the olive oil over low heat. Add the rabbit pieces and cook gently for about 1.5 hours, or until the rabbit is tender and cooked through. Remove from heat and let cool slightly.

    Prepare the Pasta

    Cook the house pasta according to package instructions until al dente. Drain and set aside.

    Sauté Vegetables

    In a separate skillet, add a tablespoon of olive oil and sauté the baby carrots and pearl onions over medium heat until they are tender and slightly caramelized, about 10-12 minutes. Season with salt and pepper.

    Make the Parmesan Cream

    In a bowl, combine the grated Parmesan cheese with a little of the pasta cooking water to create a creamy sauce. Stir until smooth.

    Combine Ingredients

    In a large mixing bowl, combine the cooked pasta, sautéed vegetables, and shredded rabbit meat (discarding bones). Add the Parmesan cream and toss well to coat.

    Serve

    Plate the carbonara and top each serving with a slow-cooked egg. Sprinkle with additional black pepper and serve immediately.
