Preparation and Grilling

    Marinate the Meats

    In a large bowl, combine olive oil, garlic, salt, black pepper, and any other preferred spices. Add all the meats and ensure they are well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Preheat the Grill

    Prepare your grill for medium-high heat. If using a charcoal grill, ensure the coals are hot and ashed over.

    Skewer the Meats

    Thread the marinated meats onto skewers, leaving some space between each piece for even cooking.

    Grill the Meats

    Place the skewers on the grill and cook each type of meat, turning occasionally. Cook until the beef reaches medium-rare (about 135°F), pork is cooked through (145°F), chicken is fully cooked (165°F), and lamb is medium (about 145°F). Sausages should be grilled until browned and cooked through.

    Serve

    Once cooked to desired doneness, remove the meats from the grill. Allow resting for a few minutes before slicing and serving. Serve with chimichurri sauce or your favorite sides.
