Simple Syrup

Make infused simple syrup
In a small saucepan combine 1 cup water and 1 cup granulated sugar. Add 1 tablespoon fresh lemon zest. Bring to a gentle simmer over medium heat, stirring until sugar fully dissolves. Simmer 1 minute more to extract zest oils, then remove from heat. Let steep 15 minutes, then strain out zest into a heatproof container. Chill until cool (about 20–30 minutes) or use at room temperature if making lemonade immediately.

Juice lemons
Juice enough lemons to yield 1 cup fresh lemon juice (about 4–6 lemons depending on size). Strain seeds and pulp if you prefer a clear lemonade.

Combine base
In a pitcher, combine the cooled lemon-infused simple syrup (about 1 cup), 1 cup fresh lemon juice, and 3 cups cold water. Taste and adjust: if too sweet, add up to 1/2 cup more water; if too tart, add up to 2 tablespoons more syrup (or sugar dissolved in a little warm water).

Chill with ice
Add 4 cups of ice to the pitcher or pour lemonade over ice in individual glasses to chill quickly. If serving later, refrigerate covered until ready to finish.

Prep garnishes
Gently bruise the mint leaves by clapping them between your palms or lightly muddling in the palm of your hand to release aroma. Lightly clap rosemary sprigs to bring out the oils. Prepare lemon wheels and lime slices for garnish and optional coarse sugar for rimming.

Assemble Rodizio Lemonade
Fill individual glasses with ice. Pour the lemonade base into each glass, leaving about 1/4 cup space. Top each glass with about 2 tablespoons club soda to give a gentle effervescence (adjust to taste). Add 2–3 mint leaves, one rosemary sprig, and a lemon wheel and lime slice to each glass. Give a gentle stir to incorporate the soda and release aromatics from the herbs.
