Cocktail Base
Prepare glass
Select a rocks glass (10–12 oz). Rub the grated lime zest around the rim of the glass, then discard excess zest. This adds a fresh citrus aroma to each sip.
Combine liquids
In a cocktail shaker, add 2 oz cachaça, 1 oz fresh lime juice, 0.5 oz simple syrup, 1.5 oz fresh pineapple juice, and 0.5 oz fresh orange juice.
Add bitters
Add 3 dashes of Angostura bitters to the shaker to introduce subtle spice and depth that complements the sugarcane spirit and fruit juices.
Ice & Shake
Shake with ice
Fill the shaker with a generous handful of ice (enough to chill and dilute properly). Shake vigorously for 12–15 seconds until the shaker is cold to the touch and slightly frosted.
Prepare glass with ice
Fill the prepared rocks glass with cracked or cubed ice (about 1 cup) to keep the drink chilled and slightly dilute while sipping.
Strain
Double-strain the shaken cocktail into the ice-filled rocks glass using a hawthorne or fine strainer to remove small ice chips and any pulp.
Garnish & Serve
Garnish the cocktail with a fresh lime wheel or wedge on the rim and tuck a small pineapple leaf or thin pineapple slice beside it for visual appeal and aroma.
