Prepare pineapple
Trim top and bottom of the pineapple. Stand upright and slice off the skin in vertical strips, removing most of the eyes. Cut the pineapple into 1/2-inch (1.25 cm) thick rings and remove the core from each ring with a small round cutter or a knife. Alternatively, cut into 1-inch thick spears for serving.

When glazed pineapple is finished, transfer to a serving platter. Zest the lime over the warm pineapple, sprinkle the torn mint leaves over the top (if using) and serve warm or at room temperature.

Make the glaze
In a medium bowl whisk together the brown sugar, pineapple juice, cinnamon, ginger and sea salt until mostly combined. If using rum, stir it in here.

Cook the glaze
In a large nonstick or stainless steel skillet over medium heat, melt the butter until foaming. Pour the glaze mixture into the skillet and bring to a gentle simmer, stirring frequently. Cook for 4–6 minutes until the sugar dissolves and the mixture thickens slightly and becomes glossy. It should coat the back of a spoon.

Glaze the pineapple
Increase heat to medium-high. Arrange pineapple rings or spears in a single layer in the skillet (work in batches if necessary). Cook undisturbed 2–3 minutes until the bottoms caramelize and turn golden. Flip pieces carefully and cook an additional 1–2 minutes so both sides develop a glaze. Spoon the pan glaze over the pieces while cooking to build a sticky coating. If glaze reduces too much, add 1–2 tbs pineapple juice to loosen.
