Method
Bread & Spread
- 1
Prepare the bread
Preheat your oven to 400°F (200°C). Slice the baguette or loaf on a slight diagonal into 1/2-inch (about 1.2 cm) thick slices. Arrange the slices in a single layer on a baking sheet. If your loaf is very large, work in two batches so slices do not overlap.
- 2
Make garlic butter
In a small bowl, combine the softened unsalted butter (6 tbs) and 1 tablespoon olive oil. Add the minced garlic (4 cloves), finely chopped fresh parsley (2 tbs), 3/4 teaspoon salt (from the 3 tsp) and 1/4 teaspoon freshly ground black pepper (from the 1 tsp). Mix thoroughly until evenly combined. Taste and adjust seasoning — add the remaining salt in small increments if needed. If using, stir in 2 tablespoons grated Parmesan and 1 teaspoon red pepper flakes now.
- 3
Apply and toast
Using a butter knife or offset spatula, spread about 1 tablespoon of the garlic butter onto each bread slice, covering surface to the edges. Place the baking sheet in the preheated oven and bake for 8–10 minutes, until the edges begin to turn golden and butter is bubbly.
- 4
Finish under broiler (optional for extra crisp)
For an extra-crisp top, switch the oven to broil on high and broil the slices 1–2 minutes more, watching constantly so they do not burn. Remove from oven when tops are golden and garlic is fragrant.
- 5
Serve
Transfer garlic toasts to a serving platter. Sprinkle remaining chopped parsley and a light dusting of extra grated Parmesan if desired. Serve immediately while warm.
