Green Cleanse Juice (1 large jar / 2 servings)

Beet Berry Refresher (1 large jar / 2 servings)

Method

Green Cleanse Juice (1 large jar / 2 servings)

  1. 1

    Prepare produce

Wash kale and spinach thoroughly. Remove and discard thick kale stems. Peel the cucumber if waxed (optional) and chop into chunks that will fit your juicer or blender. Core and quarter the green apple. Chop celery into 2–3 inch pieces. Peel lemon and ginger.

  2. 2

    Juice (for juicer)

Feed kale, spinach, cucumber, green apple, celery, lemon, and ginger through a juicer according to manufacturer instructions, alternating harder and softer items (apple/cucumber then greens) to maximize yield.

  3. 3

    Blend (for blender method)

If using a blender, combine kale, spinach, chopped cucumber, apple, celery, lemon, ginger and 1/4 cup cold water. Blend on high until completely smooth (30–60 seconds).

  4. 4

    Strain (blender method)

Place a fine-mesh sieve or nut milk bag over a large bowl or pitcher. Pour blended mixture through sieve or bag, pressing or squeezing to extract as much liquid as possible. Discard pulp or save for smoothies/baking.

  5. 5

    Finish and serve

Stir 1/8 tsp sea salt into the juice to enhance flavor. Add 4 ice cubes, stir briefly, and pour into two glasses (or one large jar). Serve immediately for maximum nutrient retention. Refrigerate leftovers in a sealed container and consume within 24–36 hours.

Citrus Sunshine Juice (1 large jar / 2 servings)

  1. 6

    Prepare produce

Peel and section the oranges and lemon. Scrub and trim carrots; cut into pieces that fit your juicer or blender. Peel and thinly slice turmeric root (or measure ground turmeric).

  2. 7

    Juice (for juicer)

Run carrots, oranges, lemon, and turmeric through the juicer, alternating items to help clear the chute. Collect juice in a clean container.

  3. 8

    Blend (for blender method)

Combine carrots (chopped), orange sections, lemon, and turmeric in a blender with a couple of ice cubes. Blend until smooth. If using ground turmeric, add it after blending and pulse briefly to combine.

  4. 9

    Strain (blender method)

Strain the blended mixture through a fine sieve or nut milk bag to remove fiber. Press with a spatula or squeeze the bag to get most of the liquid.

  5. 10

    Sweeten and serve

Taste and add up to 1 tsp raw honey or maple syrup if you want more sweetness; stir to dissolve. Add ice and serve immediately chilled. Store any leftover juice in the refrigerator and consume within 24–36 hours.

Beet Berry Refresher (1 large jar / 2 servings)

  1. 11

    Prepare produce

Scrub the beet thoroughly and trim ends. If the beet is large, cut into smaller pieces. Rinse berries if fresh; if frozen, allow a few minutes to thaw. Core and chop the red apple. Peel and halve the lime. Pluck mint leaves from stems.

  2. 12

    Juice (for juicer)

Run beet pieces, apple, berries, lime, and mint through the juicer. Because beets are dense, alternate with softer items (berries/apple) to help extraction.

  3. 13

    Blend (for blender method)

Combine beet (raw), berries, chopped apple, lime juice, mint leaves, and 1/4 cup cold water in a blender. Blend on high until smooth; add a few ice cubes while blending to chill and help texture.

  4. 14

    Strain (blender method)

Press the blended mixture through a fine mesh sieve or nut milk bag into a pitcher to remove pulp. Use a spatula to press remaining liquid; discard or reserve pulp for another use.

  5. 15

    Finish and serve

Stir the juice to combine. Add ice cubes, pour into glasses, and garnish with a sprig of mint if desired. Keep refrigerated and consume within 24–36 hours.
