Prep steaks
Remove steaks from the refrigerator 30 minutes before cooking so they come to near room temperature. Pat each steak dry with paper towels to remove surface moisture—this promotes a good sear.

Season
Rub each steak lightly with olive oil on both sides. Combine kosher salt, black pepper, and garlic powder in a small bowl and season both sides of each steak evenly (about 0.5 tsp salt per side for medium-thick steaks). Press the seasoning gently into the meat.

Preheat pan or grill
Heat a heavy skillet (cast iron preferred) or outdoor grill to high heat (about 425–450°F / 220–230°C). If using a skillet, add 1 tablespoon olive oil and heat until shimmering but not smoking.

Add butter and baste
During the last 1–2 minutes of cooking, add the unsalted butter to the pan. Tilt the pan slightly and spoon the melted butter over the top of each steak repeatedly for 30–60 seconds to add flavor and finish the crust. If using a grill, remove steaks to a cooler part of the grill and brush with melted butter.

Top with Parmesan
Transfer the cooked steaks to a clean plate or baking sheet. Immediately sprinkle about 3/4 tablespoon freshly grated Parmesan cheese on each steak (total ~3 tablespoons for 4 steaks). The residual heat will slightly melt the Parmesan, creating a savory topping. If you prefer the cheese more melted, place the steaks briefly (30–60 seconds) under a preheated broiler or a very hot grill lid.
