Bring steaks to room temperature
Remove the steaks from the refrigerator 30–45 minutes before cooking so they come to room temperature. Pat them dry on both sides with paper towels.

Season
Evenly season both sides of each steak with kosher salt and freshly ground black pepper. Press seasoning lightly into the meat.
Garlic Butter Baste (House Garlic Rub)

Prepare the garlic butter
In a small saucepan over low heat, melt the unsalted butter with the olive oil. Add the minced garlic and cook gently for 1–2 minutes, stirring constantly, until the garlic becomes fragrant but not browned. Remove from heat and stir in the chopped parsley, lemon juice, smoked paprika, red pepper flakes, worcestershire sauce, and coarse sea salt (if using). Taste and adjust seasoning. Keep the mixture warm (very low heat) or transfer to a heatproof bowl and cover to retain warmth.

Baste with garlic butter
During the last 1–2 minutes of cooking, spoon the warm garlic butter over the top of each steak repeatedly (5–8 spoonfuls per steak), tilting the pan slightly to pool the baste, or have an assistant brush the baste onto the steaks on the grill. This infuses the meat with a delicate garlic flavor without overwhelming it.

Rest
Transfer steaks to a cutting board and let rest for 5–7 minutes. While resting, spoon any remaining garlic butter from the pan over the steaks once more.
