Trim and slice
Pat the beef dry with paper towels. Trim excess fat and slice across the grain into 1/4-inch thick strips. Thinner slices will cook faster and remain tender.

Mix marinade
In a medium bowl combine 3 tbs soy sauce, 2 tbs olive oil, 1 tbs rice vinegar, 1 tsp brown sugar, 1/2 tsp kosher salt, and 1/2 tsp freshly ground black pepper. Add the minced garlic and whisk until sugar dissolves.

Marinate beef
Add the sliced beef to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes and up to 4 hours. If short on time, marinate 15 minutes at room temperature.

Heat the pan
Place a large skillet or cast-iron pan over medium-high heat. Add 1 tbs vegetable oil and let it heat until shimmering but not smoking (about 1–2 minutes).

Sear beef
Remove beef from marinade, letting excess drip off. Working in a single layer (cook in two batches if necessary), add the beef to the hot pan. Sear undisturbed for 1–1.5 minutes to get a brown crust, then stir and continue cooking another 1–2 minutes until just cooked through. Total cook time for thin strips should be ~2–3 minutes per batch.

Finish with butter & garlic
When the beef is almost done, push it to one side of the pan and add 1 tbs unsalted butter and the reserved 1/2 tsp minced garlic to the empty space. Let the butter foam and the garlic scent for 20–30 seconds, then stir everything together so beef is coated in the butter and garlic. Cook another 15–30 seconds. Taste and adjust seasoning with a pinch of salt or pepper if needed.

Rest & serve
Transfer the beef to a serving plate and let rest 2 minutes. Sprinkle with sliced green onions and 1 tsp toasted sesame seeds. Serve immediately with lemon or lime wedges if desired for a bright finish.
