    Make filling

    In a medium bowl, mix the ground chicken with 1 clove garlic (minced), half of the grated ginger, 1 tablespoon soy sauce, 1/2 teaspoon salt, 1/4 teaspoon white pepper, and 2 green onions (finely chopped). Mix just until combined.

    Prepare wontons

    Place about 1 teaspoon of filling in the center of each wonton wrapper. Moisten edges with water, fold the wrapper to seal, and pleat or form into triangles. Repeat until all wrappers are filled, yielding roughly 40 wontons.

    Simmer broth

    In a large pot, combine chicken broth and water. Bring to a gentle simmer over medium heat. Add the remaining green onions (the other 2 stalks) in whole or sliced, plus the remaining garlic and ginger if desired, and simmer for 5 minutes to infuse.

    Cook wontons in broth

    Carefully drop the filled wontons into the simmering broth. Cook for 5–7 minutes, until the wrappers are translucent and the filling is cooked through.

    Add vegetables

    Stir in carrot, Napa cabbage, and shiitake mushrooms. Simmer for 3–5 minutes until the vegetables are crisp-tender.

    Season and finish

    Taste the broth and adjust with additional salt or soy sauce if needed. Ladle into bowls and garnish with the remaining 2 green onions, sliced. Serve hot.
